This crazy, but delicious, combination was created for my son-in=law Ryan!! If you saw my previous post called Mac & Cheesy Chorizo, you are half way there....haha. If not, you will need to find that recipe in the Recipe Box. MY suggestion is to make this for dinner one night and then....with the leftovers the next day....have a BALL!!!! Haha....or make a ball, They make great party appetizers or an anytime fun snack.
MAC & CHEESY CHORIZO BALLS
PREPARED MAC & CHEESY CHORIZO
FLOUR EGGS PANKO OIL FOR FRYING
It is best to work with the Mac & Cheese while it is cold. It sticks together in a ball better. So grab it out of the refrigerator. Don't worry about the panko on top it will give it an extra crunch inside. Prepare your work station of your flour, egg and panko.
Heat your oil ....enough to cover about half way up on the balls. Just take a small palmful into your hand.....squish it together tightly....form into the shape of a ball. Then roll into the flour....egg and panko.
Now just fry them up....turning as your go until all sides are a beautiful golden brown...... drain on a paper towel.
Serve immediately so the cheese is still hot and goey!!! I know this all seems a bit crazy and a bit of work. But believe me....like Italians love our rice balls.....your guys will love these Mac & Cheesy Chorizo balls. When they bite into these...you will be a hero for sure!!! ENJOY!!!!!
