Who doesn't love a good crumb cake???? But throw some apple compote in the middle of the cake and the crumbs and take it to the next level!! The recipe is made with sour cream so it is a very moist cake with out as much sweetness. That is great because the crumbs and apples are so sweet, so the sour cream in the mix gives it a nice combination of flavor. This recipe was a recipe I found from another site named Neighbor Food. Great site....lot's of great recipes and this is the perfect example of one. The only thing I did differently was I used the apple compote instead of just diced apples. I liked the syrupy...sweetness of the compote in the middle, Just one more Apple Recipe to try with all those apples u picked!!!
APPLE CRUMB MUFFINS
FOR THE CAKE
1 STICK BUTTER 1 CUP SUGAR 2 EGGS 1 TSP VANILLA 1 CUP SOUR CREAM 2 CUPS FLOUR 1/2 TSP BAKING SODA 1/2 TSP SALT 1 TS[ BAKING POWDER
FOR THE CRUMBS
3 CUPS FLOUR 1 CUP BROWN SUGAR 1/2 CUP SUGAR 1 TSP SALT 2 TSP CINNAMON 1/2 TSP NUTMEG 2 STICKS BUTTER 1 TSP VANILLA
Sift together the flour, baking soda, salt & baking powder.
In the bowl of your mixer, cream the butter and the sugar. Add the eggs, one at a time. Then the vanilla and sour cream. Mix until well combined.
Drop batter into cupcake pan filling each cup half way up......
Now top with a tablespoon of the Apple Compote....
Set this aside for a minute while you make your crumbs. It is sooooo easy to make crumbs, it will only take you a minute. Just get all the dry ingredients into a large mixing bowl. Then add the vanilla and melted butter. Now get in there with your hands and mix well until those beautiful crumbs begin to form.
Grab a big handful of crumbs and drop it on top of each muffin. Press down gently to hold it all together.
Bake at 350 degrees or until a toothpick comes out clean and a nice golden brown....
Decision time.....what to top it with. You know I usually like to take things over the top. You could drizzle a delicious carmel sauce or a white icing. Actually, I think today I am going to keep it simple and just go with a dusting of powdered sugar. Simple...... and now it's time to eat!!!!!
