GIGI'S FAVORITE!!! Out of all things Thanksgiving.....this is my mom's favorite. Of course, they are so sweet they taste like candy...perfect for my mom because she won't even look at vegetables. Especially green ones!! They really are delicious though....I also love everything sweet potato. And such an easy recipe. There is nothing to this one!!
4 TO 5 SWEET POTATOES 1 STICK OF BUTTER 1 CUP BROWN SUGAR 1/2 CUP HONEY
Preheat your oven to 350 degrees.
Very simply.....peel and wash your sweet potatoes. First cut them in half lengthwise so they will lay flat on the cutting board. Then cut them into cubes, Get them all into an oven safe casserole dish.
Slice your stick of butter into about 8 pieces and place on top of potatoes.
Next sprinkle the brown sugar all over the top........
Lastly, drizzle the honey all over the top as well.....
Cover loosely with foil and get into a 350 degree oven. Let them cook about 45 minutes. Then uncover the dish, toss slightly and drain the juices down if there is an excessive amount. You only want them about half covered now. Return them to the oven for the last 20 minutes or so until fork tender.
A staple on every Thanksgiving Day table!!! Definitely a family favorite anytime of year!!!! And soooo simple to make.
