I love stuffing mushroom!!! They are like the perfect little empty plate waiting to be filled with something. And the possibilities.....endless. I tend to do these more around holiday time for some reason, but they are great anytime. I thought this recipe, because they are stuffed with a creamy crab concoction, would be a great summer side or appetizer. They are a light, creamy crab stuffing that you will love.
CREAMY CRAB STUFFED MUSHROOMS
1 LARGE CAN OF LUMP CRAB MEAT (ANY TYPE) MUSHROOMS TO STUFF 1 RED PEPPER 1 YELLOW PEPPER 3 CELERY STALKS 1 BUNCH OF SCALLIONS 4 GARLIC CLOVES 1 LEMON 3 TBLSP BUTTER 3 TBLSP OLIVE OIL 1 8OZ PKG CREAM CHEESE SOFTENED 1/2 CUP PECORINO ROMANO GRATED CHEESE 3 TBLSP MAYONAISSE ****PREPARED BREAD CRUMBS****
Preheat your oven to 350 degrees.
Start by preparing your mushroom. Remove the stems but set them aside.....we will use them later. Wash your mushrooms well.
Chop the red pepper, yellow pepper, celery and garlic, scallions and stems of mushrooms. Heat the butter and oil in a large saute pan and start sweating out the veggies. Give the peppers and celery a head start because they take a bit longer. Just a few minutes....then get it all into the saute pan. You only want to soften these not cook through because they will also continue cooking in the oven. Season all well with salt & pepper. Add the juice of 1 lemon. Remove from heat and set aside to cool off a bit.
In another mixing bowl....mix together the softened cream cheese with the mayo, grated cheese and 1/3 cup of my prepared Bread Crumbs. You can use a package breadcrumb but it just adds so much flavor to use my spiced up recipe. Last into the mix....the crab!! It goes in last so you can just mix gently!!
Add in the veggie mixture and again....mix together gently. Just fold it in until combined.
That's it!!!! All you have to do now is ......stuff!!! Lay your mushrooms out on a baking tray and pile that stuffing on!!!
Please do not forget to top each with some more of those Bread Crumbs!!! You will not want to miss out on the extra flavor and crunch this will bring!! Soooo important!!!!
Bake at 350 degrees for 30 minutes.....put about 1/2 cup of water in the bottom of the pan. This will help to steam the mushrooms during the cooking process so they will not dry out. Bake uncovered........ Don't they look amazing!!!!
They are creamy and crabby and so tasty and delicious on the inside....topped with the beautiful golden brown crunch on the inside. Fantastic....I'll take 5!!! ENJOY!!!!! ALL GOOD STUFF!!!!!
