Roasted Peppers are really one of the simplest things to make. Think about what must go into a jar of roasted peppers when you buy them from a store? Or exactly how long they have been in that jar or will remain in that jar? I don't think we want to eat that...and believe me it really comes though in the taste. When you see how simple it is to make your own roasted peppers...I don't think you will be buying them again anytime soon. I usually make a batch of these on a Sunday, then I have them all week long to add to salads, sandwiches/wraps and many entrees. I have used only red today, but using the yellow and orange along with them, just makes these so beautiful.
ROASTED PEPPERS
6 -8 RED PEPPERS (OR THE COLOR OF YOUR CHOICE) 3 CLOVES GARLIC OLIVE OIL SALT & PEPPER
Line a cookie sheet with foil and preheat your oven to 375 degrees. Start with some beautiful red peppers. Rinse them off to clean. Pour some olive oil in your hand and rub each of them to coat.
Place on foil lined pan in oven for about 30 minutes.
After the 30 minutes grab a pair of thongs and flip them over for another 30 minutes.
Remove them from the oven and let them just sit and cool. Once they are cooled it will be very easy to peel the skin. I work in sections. first open in half and remove the core and the seeds. then just peel off the skin from each section.
Once they are all peeled you can slice them. As thin as you like them. Then add about 3 TBLSP olive oil and the 2 cloves of minced garlic. Season with salt and pepper and enjoy!!!
