Chicken soup is pretty much food for the soul. Its medicine when your sick, comfort food on a cold, rainy day and a favorite for any kid I know. And best of all, soooo simple to make. I don't think people realize how easy it is to make chicken soup. I don't think I would ever buy soup in a can. The amount of sodium and preservatives in a can is crazy!! I know I've said this before but just think about it...what must go into a can that will sit on a shelf for a very long time to preserve the contents??? Do you really want to eat that?? I don't think so...make it yourself!! It is so much healthier for you and your children. You can use any pasta they like in it or my favorite...tortellini!!
CHICKEN SOUP
2 BONE IN CHICKEN BREASTS 2 48OZ CANS OF COLLEGE INN LOW SODIUM CHICKEN BROTH 1 LARGE ONION CHOPPED 1 CUP CHOPPED CARROTS 1 CUP CHOPPED CELERY 1 CUP MARINARA SAUCE ( THE SECRET INGREDIENT!!) SALT & PEPPER
This is how easy it is.....put all the ingredients except for the marinara sauce in a large stock pot and bring to a simmer.
Let it simmer for about 45 minutes until the chicken is cooked through. When done, take it out and pull it off the bone and chop it up.
Put the chopped chicken back in the pot along with that secret ingredient....one cup of your favorite marinara sauce. You can also use a tomato puree if you like but the marinara has a little more flavor in it so it works great. Bring back to a boil and add your favorite pasta.
Now...you can finish it off with some parmesan cheese and crushed crackers!!! YUUMMMM!!! I guarantee you and your kids will love this soup. And I definitely guarantee that it is so much healthier than anything you get out of a can. Try it....you will love it!! My little Hattie loves it!!! And it looks like Joey does also!!
