I am soooo excited to finally get to Fall. I started this website in the Spring, so this is my first Fall/Holiday Season and I am looking forward to sharing so many great Fall recipes. I am a huge pumpkin fan and so is my daughter Chelsea...she requested that I do some healthy pumpkin treats for her first, so here we go. Pumpkin Protein Balls!!! Good plan...we will get this healthy stuff out of the way first!! A great healthy snack....gotta love it!!
PUMPKIN PROTEIN BALLS
2 1/2 CUPS OATMEAL 1 CUP CRUSHED PECANS 1/4 CUP FLAX SEED MEAL 1/3 CUP VANILLA PROTEIN POWDER 1/2 CUP GOLDEN RAISINS 1 CUP PUMPKIN PUREE 1/3 CUP HONEY 1 TSP CINNAMON 1 -1/2 TSP PUMPKIN PIE SPICE 1 TSP VANILLA
This is soooo easy!! Just get the first 5 ingredients into a bowl.....the oatmeal, crushed pecans, flaxseed meal, protein powder and raisins....
Now, in a smaller bowl....mix together the pumpkin puree, honey, cinnamon, pumpkin pie spice and vanilla.
Next, pour the liquids into the dry and mix well together!!
OK...so store them in a tupperware in the freezer for a great, healthy bite.
OR......you can take it to the next level and roll them in cocoa powder. Believe me...they do not need it...but....everything is better in chocolate!!
