What else do you do with brown bananas!!! You make delicious banana bread. You might as well turn those mushy brown bananas into something amazing. My family loves banana bread...especially with chocolate chips on top!! This is a very simple recipe and a very moist result. The chocolate chips on top don't hurt either....yummmmm!!!!!
BANANA BREAD
1 CUP SUGAR 1/3 CUP BUTTER 4 RIPENED BANANAS 2 EGGS 1/3 CUP VEGETABLE OIL 1 2/3 CUP FLOUR 1 TSP BAKING SODA 1/2 TSP BAKING POWDER 1/2 TSP SALT CHOCOLATE CHIPS FOR TOP
*** This recipe will make a loaf using a loaf pan. But I usually double this recipe and use a 13 x 9 ceramic baking dish. First, I like to make alot and second I just like the size and shape of the slices when you cut them. Or maybe its just you get more chocolate chips per square inch of bread???
So first, you peel and put all your bananas in a bowl and mash them up!!
In a small bowl, sift together your flour, baking powder, baking soda and salt.
In a larger mixing bowl or a stand-up mixer, cream the sugar and butter until smooth and fluffy. Then add eggs one at a time and mix.
Add oil and bananas. Then flour mixture slowly while it mixes until all incorporated. Pour into baking dish and top with chocolate chips. Lots of chocolate chips!!! And then some more chocolate chips!!
Bake for 1 hour or until inserted toothpick comes out clean. Serve this to your kids for breakfast...they will love you!!. There's bananas in it...it should qualify as breakfast!!
