So my beautiful friends and V.I.C.'s (Very Important Chef's) Karen & Lisa are here for a couple of girls days!!! Sooo much fun because we all love, love, love to cook!!! We have such a great time cooking together. Cooking, laughing, a bottle of wine, or 4, and we are in our happy place!! Always a blast. When we get together we always cook lots of veggies since Karen is the vegetarian of the group. Today we made this amazing creamy crab...avocado..mango concoction. WOW!!! Perfect for a party appetizer but we shared it for lunch today. We made some crostini on the side and it was awesome.
CRAB AVOCADO STACKER
3 RIPE AVOCADO 2 EARS OF CORN ON THE COB PRECOOKED 1 LARGE OR 2 SMALL MANGO 1 16OZ JAR OF LUMP CRAB
First step is make your Vinaigrette. Very simple get the first 8 ingredients into a bowl and mix well using a whisk. Continue to whisk while streaming in the olive oil. Now.....you can stop right there if you do not want it creamy. This is an amazing vinaigrette and you can enjoy it just like that. You should also make this ahead of time and let the flavors all develop together. But for this crab concoction I like to add the mayo to make it a creamy version. So just add it in and mix it up!!
Now....I love to use a small Trifle Bowl for this so you can see all the beautiful layers.....It's all about presentation!!!
Start wit the first layer by very simply dicing your avocado. Layer it on the bottom.
Next cut the corn off the cob and add it into make the next layer. If you don't like corn...just skip this step but it definitely adds a nice chunky texture and flavor.
Third layer is the diced mango!!!
For the final layer....get the crab meat into a bowl and add about 1 cup of the Honey Lime Vinaigrette and mix gently so not to break up all the crab. That's it...put the last layer on top.
You can sprinkle some paprika on top for color and a couple pieces of mango....and it will look gorgeous.
Karen, Lisa & I decided to thinly slice up some bread. Brush it with olive oil...sprinkle with salt & pepper and garlic powder. Put it all on a baking tray on low broil until browned. It went perfectly with this!!! I highly recommend taking this extra step....sooooo good!! You can also drizzle a little more of that vinaigrette on top.
