Avocado Toast is a hot menu item today. You see it everywhere. So, I decided to do one myself with some lobster on top!! So easy to make and absolutely delicious!! The best part about this recipe is that the ingredients are so simple because you do not want to mask the taste of either the avocado or the lobster. Here's what I did...
LOBSTER AVOCADO CROSTINI
LOAF OF BREAD FOR CROSTINI 4 AVOCADO 1/2 LIME 2-3 LOBSTER TAILS OR ABOUT 2 CUPS OF LOBSTER MEAT SCALLIONS 2 TBLSP CITRUS CHAMPAGNE VINEGAR 2 TBLSP SOUR CREAM 1/2 TSP RED CRUSHED PEPPER SALT & PEPPER OLIVE OIL
Very simply, grab your bread, slice on an angle, brush with a mixture of olive oil, and salt & pepper. Get it into the oven on a low broil for a few minutes until lightly toasty. Please keep a close eye on this. It can burn very quickly!!
Cut and scoop your Avocado's into a small bowl. Season with salt & pepper, red crushed pepper and the juice of 1/2 of a lime. I like to then use a potato masher to mash it all up. Guacamole is nice when you leave it a bit chunky but this is not meant to be. So mash it all up good!!
Next, I steamed the tails, removed the meat and chopped it up into bite sized peices....
Then, I added the Citrus Champagne Vinegar, the sour cream, scallions and a pinch of pepper... Mix it gently and that's it!! How simple is that?
Now just build them up......
