This recipe is so great because it is so versatile and EASY! You can take this in so many different directions. Today, I will show you the basic recipe for the dip with just a couple different presentation options on how to serve as an appetizer. You can use it on a pizza, fry it.... and even use it in a pasta!!! Everyone loves buffalo chicken, that is why I spend so much time experimenting with it. BUFFALO CHICKEN
3 BONE IN CHICKEN BREAST PIECES 1 8 OZ PACKAGE CREAM CHEESE 1 CUP BUFFALO SAUCE 1 CUP RANCH DRESSING 1 8 OZ PACKAGE OF SHREDDED MEXICAN BLEND CHEESE Preheat oven to 350 degrees. Start by putting the chicken in a roasting pan. Drizzle with oil and season with salt & pepper. Bake for 1 hour or until cooked through. Remove from the oven and allow it to cool completely. When cool, remove skins and bones and just cut up and shred in to pieces.
Simply put the cream cheese in the bottom of an oven safe baking dish. Add the buffalo sauce and ranch dressing and mix in with the cream cheese as well as you can. Don't worry, it will never be perfectly smooth. But it will all melt together in the oven.
Add the shredded mexican cheese, reserving a handful to top it off with. Add the shredded chicken and mix altogether well. Top it all off with an extra drizzle of the buffalo sauce and the ranch dressing and cover all with the reserved handful of shredded cheese. Bake at 350 degrees uncovered for 45 minutes until bubbly.
There you go. That is the basic recipe for this dip. Now you can simply serve it with chips or crackers.........delicious!!!
You can serve these as smaller bowls around your party or individual serving size glasses like I did here...... just add an extra drizzle of the two sauces and push the celery sticks in the middle. Soooo cute to have around.
Or my favorite here......OMG!! You have to try this one. Use thick slices of cucumber. Top with a big spoonful of the buffalo chicken, add an extra drizzle of the buffalo sauce and ranch sauce. Then take it over the top. Top it off with a crumble of blue cheese!!! Absolutely beautiful...and so amazingly delicious. Make a lot....they will go quickly!!
