This is an awesome recipe given to me by my beautiful friend Dorothy!! Her daughter Sam, who loves to cook (I love that!!!) thought I would love this recipe and wanted to share it with everyone!!! I believe it was from her Campus Ministry Leader, Sandy, at the University of Hartford, where Sam attends college!! Sandy's recipe....well.....OMG!!! She was right!! The cookies are fantastic. Some Gingerbread recipes are so dark, heavy, crunchy and strong in flavor. This is a very all around lightened up version in my opinion. That is what's so nice about this cookie. Simple, amazing flavor and softer than usual. I took it one step further. I added a very simple vanilla glaze and spinkled some with Christmas sprinkles to make them look festive.....but... the rest I sprinkled with a cinnamon/vanilla powder/sugar combo!!!
This vanilla glaze combined with the cinnmon mixture on top is such a warm delicios combination. And, I actually love they way they look on my platter!! Such beautiful cookies....your the best SAM!!!! We love them!!!
SWEDISH GINGERBREAD COOKIES
1 CUP UNSALTED BUTTER 1 1/2 CUPS SUGAR 1 EGG 1 TBLSP WATER 2 TBLSP LIGHT CORN SYRUP 3 1/4 CUP ALL PORPUSE FLOUR 2 TSP BAKING SODA 2 TSP CINNAMON 1/2 TSP CLOVES 1 TSP GINGER
Cream the butter and sugar until lght and fluffy. Then add the egg and mix unitl combined.
Next, add the water and corn syrup......
Last, add all of the dry ingredients that have been sifted together....
What an easy dough to make!!! Now, you should refrigerate for atleast one hour before using but you can make this dough ahead of time. Just wrap in plastic wrap as I did and refrigerate for a couple days until ready to use.
OK...so I was waiting for my two little elves to come and help with the next part and here they are!!! Isn't it great that all i say is let's make cookies and these two still come running!!!! I love that!!
When ready to make cookies, just take the dough out of the refrigerator and let it rest till until it is easy to handle and work with. Work in batches and roll pieces of the dough out on a lightly floured surface to about 1/2 in. Cut out with any shapes you choose. I like to keep it simple though so we used gingerbread men and simple circles and stars..... Look at these two go. Boy, I have them trained well!!!!
Bake at 350 degrees for 10 to 12 minutes on a parchment paper lined baking tray. Just keep a close eye, you want them a very light brown color!
Now you can make your glaze and make your cookies shine!!!! Just add all ingedients into a small bowl and mix slowly. The icing will be thin, which is what you want. You just want a thin glaze on these...... Add a thin layer to each cookie and sit on a rack so any extra can drip off.....
I love my babies!!!! Just wait to see what a great job they did!!!!
So now your can sprinkle with any color sugar or christmas sprinkles you may have. Go ahead and decorate any way you want. I do, however, reccommend this delicious mixture!!
We combined.... .1 TBLSP CINNAMON 1 TBLSP VANILLA POWDER 1/2 CUP GRANULATED SUGAR
Fantastic!!!!! It is just a normal cinnamon sugar but the addition of the vanilla powder really gives this a new depth of flavor. Very warm and rich!! Delicious Chelsea!!! And looks so elegant.......
Beautiful job girls!!!!!! They certainly had fun.....maybe a little too much!!! As usual there was a bit of a flour fight!!!! These two will never grow up, just they way I like it!!!! Funny...always the same results.......
