I can't believe I'm saying these words and tearing up as I type this....my baby, CJ, is "16" today!!!!
Feels like last week when I called my mom to bring my older daughters to the hospital at 1 am to meet thier new brother!! And the words from the doctor when she said "It's a boy"! That moment changed my life forever. I am so very grateful for that moment and every moment of the past 16 years. He has brought such unexplainable joy to not only my life but the lives of so many! I would say that I can't wait to see what the next 16 years of Cj brings but I would rather time just stop right here and now and he would not get any older. That is impossible so Instead I will continue to treasure these special moments with my son!!
This cake is always the cake CJ requests for his Birthday Cake every year. It is your classic Icebox Cake. The simpiliest cake to make and probably one of the best, in mine and CJ's opinion anyway!! There is one requirement though....you MUST MUST MUST whip your own cream. This cake will not be the same if you use any store bought whipped cream. Please.....you can do it!!!
So get your whipped cream in a bowl with about 1/4 cup sugar and whip, whip, whip.
Grab your Famous Chocolate Wafers and start building layers. Wafers, cream, wafers, cream......leaving the edges peaking out so you can see the layer you have built. That just gives it a beautiful look. Sprinkle with your favorite party decorations and refrigerate. It should sit in the frig for at least 4 to 5 hours before you are going to serve the cake so the wafers can soften. But seriously....how much easier can you get??? And this cake is amazing every time!!!!
