This is a twist on an old favorite....Ice Box Cake!! Made with wafers and cream. Layered and layered all the way to the top. The only difference......... Pumpkin flavored! Yes......if you love Pumpkin....you gotta try this one. You can seriously make this desert in under 10 minutes and it is delicious!!! And who doesn't love an Icebox Cake.....I do!!
PUMPKIN ICEBOX CAKE
2 CONTAINERS OF CHIOBANI PUMPKIN FLAVORED YOGURT 1 CONTAINER OF COOL WHIP 1/3 CUP SUGAR 2/3 CUP PUMPKIN PUREE 2 TSP PUMPKIN PIE FLAVORED EXTRACT 1 BOX NILLA WAFERS
So if you want to try this recipe, you should do it now...It is now always easy to find Pumpkin flavored yogurt. I just happened to see it in the store the other day and wanted to create something with it....this is what I made. I have some other ideas going on in my head also....so stock up on Pumpkin yogurt. It is sooo delicious,,,,I love this yogurt!!! The Pumpkin Pie flavored extract you can usually find any time of year and great to have in the house.
Grab a large bowl.....add all ingredients in except for wafers.....and mix it up!!!
You are practically done....all you have to do now is layer it up!! I love to use a clear bowl for these types of desserts but just take a handful of Nilla Wafers and make an even layer at the bottom of the serving dish. Then a layer of the cream mixture.... then wafers...then cream...and so on and so on...all the way to the top!! You will use the whole box of wafers but just save about 6 of them to crumble on top of the finished product......it will look gorgeous!!!
OK......really??? How easy was that??? Literally 10 minutes!! And so worth the time. So now just refrigerate for atleast 6 hours so the wafers will soften and it will be amazing!! Actually. I think the cake is so easy that one of my daughters or my nieces should make this for our Thanksgiving dessert table.....hummmm Kristyn!!!! Which one of you will surprise me???? I can't wait........
