Here is another great recipe for you!! Again...great for Meal Prep Sundays!! If you fry your chicken bites ahead of time, then the week night is a piece of cake! All you have to do is simply put the sauce together (actually you can do that ahead of time also and just have it ready to go in the frig!!) then all there is left to do is make some rice. What a great meal for a quick dinner during the week!! This is a great sauce. I put this on many things...shrimp, steak etc.... If you look back into my recipe box it is also the same sauce I used on the Honey-Ginger Glazed Chicken. So many delicious ways to use this....give it a try!!
ASIAN CHICKEN BITES
CHICKEN TENDERS EGGS FLOUR PANKO CRUMBS OIL FOR FRYING
Start by preparing your Chicken Bites!! Again, I like to use chicken tenders, but go ahead and use boneless breasts...or thighs. Whichever you prefer....or both!!
First, cut your chicken into bite size pieces. Then, in this recipe, we want a nice crunchy chicken bite so....we will coat first with flour. Then dip in your whisked eggs.....then lastly....roll them into the panko crumbs. They will give it that great crunch. The thing I love about Panko crumbs is also that they are plain....so you get that great crunch without any flavors competing with your sauces. Or you can add any flavors you want to them......hummm...that's another story!!!
Now fry in a large saute pan until cooked through and a beautiful golden brown. Turning halfway for a great crunch all over.
Beautiful!!!! Now the sauce.....just get all ingredients into a bowl except the scallions. Those I pretty much use for the topping so they stay fresh, crunchy and people can put exactly how much they want on their plate....or none at all!!
There you go.....simple right??? Now just make yourself some rice and make your plate!!! I usually throw all the chicken in a bowl, pour all the sauce over the top and toss to coat it all but you can use as much or as little as you like!!! Anyway you do it...... ENJOY !!! ALL GOOD STUFF!!!!
