This is a great superfood salad combination!! I came across these beans one day and wanted to share them with you. They are great in any salad. Similar in size and shape to a lentil bean. So they are like these little tiny, pop in your mouth, excellent source of potassium, protein and fiber....bean!! Try it on your next salad or in your next soup!!
KALE & ADUKI BEAN SALAD
1 BIG BOWL OF KALE (PREWASHED) 1 CAN OF ADUKI BEANS 1 CUCUMBER 1 BUNCH OF SCALLIONS 1/2 CUP CRANBERRIES 1/2 CUP PEPITAS PICKLED RED ONIONS
****OPTIONAL GRILLED CHICKEN OR ANY OTHER PROTEIN YOU CHOOSE***
Let's do this. Wash and chop your kale...
Open the can of Aduki Beans and rinse beans thoroughly....
I like to grate my cucumber but you can cut it anyway you like......
Top with your Pepitas, Cranberries and Scallions.......
This is such a healthy salad on its own....but then top it with some more protein and its officially a Power Plate!!! Definitely Chelsea approved when you top it with Chelsea's Grilled Chicken!!! I topped it all with my Pickled Red Onions!! Such a great addition to any salad.
