The world of corn continues.... this Corn Bread is definitely one of my favorites. Besides the Corn Fritters, of course!! Those are fabulous. Everyone in my world loves, loves, loves corn bread. So, I came up with a great recipe that is slightly sweetened with honey and stuffed with fresh sweet corn. Easy to mix up if you just make some extra corn at your next BBQ. I bake and then serve mine in a great cast iron pan but if you do not have one then you can use a regular baking dish. Or make muffins out of it....All Good Stuff!!
CHOCK FULL OF CORN BREAD
2 CUPS OF FRESH CORN CUT OFF THE COB 1 1/4 CUPS FLOUR 1 1/4 CUPS CORNMEAL 2 TSP BAKING POWDER 1/4 TSP BAKING SODA 1 1/2 TSP SALT 3 TBLSP HONEY 3 TBLSP BROWN SUGAR 1 CUP BUTTERMILK 1 CUP MILK 2 EGGS 1 STICK OF BUTTER (PLUS 1/2 OF A STICK IF YOU ARE USING A CAST IRON)
Preheat your oven to 350 degrees. So, as I said, hopefully you have left over corn so it will be a bit easier, but if not then go ahead and cook and cool your corn. Then just cut it all off the cob until you have 2 cups!! Break any clumps apart with your hands.
Next, sift together the flour, corn meal, baking powder, baking soda & salt.
In another bowl, whisk together the buttermilk, regular milk, eggs, brown sugar and honey.
You can now just mix the wet and dry together.
Fold in the delicious corn!!!!
Looks amazing already....right??? Just wait....it gets better. Let's fold in the stick of melted butter.....haha I told you it gets better. It's always better with butter!!!
Now...if you are using a cast iron pan....you want to preheat your pan on top of the stove so it is good and hot when you pour the batter in. This will give it a great crunch on that side. So heat your pan, then melt another 1/2 stick of butter in before you pour in the batter. I know you are saying....WHAT...more butter?? Trust me....do it!!!!
Now get the whole pan into the oven....
Bake at 350 degrees for about 40 minutes. It will all depend on the pan you are baking in though so please please please....throw those timers away and just keep an eye on it. When it looks like it is turning a beautiful golden color on top...test it. If a toothpick comes out clean it is done. If not...give it a few more minutes and try again. You can do it!!! It will look something like this....
GORGEOUS!!!!!! And the smell.....OMG!!! The hardest part is letting it cool. And you really have to otherwise it will fall apart if it is too hot. OK...Let's cut into it............
