I absolutely love, love, love when this happens.....someone sent a recipe to me!!! Mr. Romeo ( gotta love the name) sent a recipe for these chicken meatballs. He is a coworker of my daughter, Chelsea. Apparently, they talk food....alot!! Haha...I love it!! I guess my daughter stinks up the office quite frequently with her Grilled Chicken that is loaded with garlic. Everyone there knows she is always, always watching her diet and eating extremely healthy. Mr. Romeo, loves to cook, and when he makes something that he thinks she may like, he brings her a sample! How nice is that???? It makes me so happy that she is surrounded by such great people....keep on taking care of my baby!!! Anyway, she loved these meatballs sooooo much, that she insisted that Mr. Romeo give her the recipe so I could share it with all of you. They really are fantastic.....the balsamic in the mix gives them amazing flavor. Soooo flavorful....and yes.....soooo healthy!!!
ROMEO'S BALSAMIC CHICKEN MEATBALLS
2 LBS GROUND CHICKEN (50/50 MIXTURE OF WHITE/DARK MEAT) 1 MEDIUM ONION DICED 2 HULLED ROASTED RED PEPPERS DICED 1 CUP GRATED CHEESE 1 CUP BREAD CRUMBS (OR ALMOND FLOUR) 2 EGGS WHISKED 3 CLOVES GARLIC 1/4 CUP BALSAMIC VINEGAR 1 TBLSP FRESH ROSEMARY 1 TBLSP FRESH SAGE 1 TBLSP FRESH THYME PEPPER OLIVE OIL
Begin by heating about 2 TBLSP of olive oil in a small saucepan. Add the diced onion and saute until translucent and softened. Season well with salt & pepper. Add the garlic, fresh herbs and balsamic vinegar. Continue cooking until the balsamic has reduced by half. Remove from heat and allow it to cool.
Next, prepare your roasted red peppers.
In a mixing bowl, add the ground chicken, whisked eggs, grated cheese, black pepper and cooled onion mixture. Now, you can use regular bread crumbs......or Mr. Romeo suggested Almond Flour if your prefer. Chelsea liked this idea so that is what we chose. It was a great binder....just as breadcrumbs would work.
Go ahead and get in there with your hands and get it all mixed well. Then you can make your balls!!!! Roll them all and lay on a baking tray. Bake at 375 degrees for about 25 minutes or until a slight golden brown and cooked thoroughly.
Such a delicious meatball with a different taste to it. Between the balsamic and all the fresh herbs....amazing!!! Great combinations of flavor Mr. Romeo!!! Gotta hand it to you....CHELSEA AND NANA APPROVED!!! But...here s the hysterical part. I had to share with everyone the last step in the recipe that Mr. Romeo sent Chelsea.....
