This is forever included in our appetizer course!!! Bacon Wrapped Scallops & Shrimp!!! First, what isn't more delicious wrapped in bacon? But when you get that awesome Applewood Smoked Bacon from Fresh Market....AMAZING!!!!!! Sometimes it is the simple things that are best and this one is simple!!!!!
BACON WRAPPED SCALLOPS & SHRIMP
SEA SCALLOPS LARGE SHRIMP BACON OLIVE OIL 1 LEMON JUICED 3 CLOVES OF GARLIC MINCED SALT & PEPPER TOOTHPICKS
Position your rack in your oven to the top shelf because we will broil these.
First, let's marinate that shrimp. Very simply, in a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt & pepper!!! Get your shrimp all mixed up in that,,,,, I like to leave the tips of the tails on when I make these. We will not marinate the scallops because they are a very light taste that you do not want anything to interfere with. They are best left on their own so we can taste every bit of them.
Grab your bacon and depending on the size of your scallops & shrimp, cut in half or thirds......look at this amazing bacon!!!
Grab a scallop, one at a time. Roll it up and stick a toothpick in it to keep it closed... Lay them all on a baking tray.
Now do the same with the shrimp.........

Now, get them into the oven. Let's start on a low broil. The bacon is actually pretty thick so we want to let it cook slowly first. Let it cook about 15 minutes and then we will turn it up to high broil to crisp it up nicely. You can turn them over to crisp the other side, also. Just keep a close eye on them and turn when you would like to. Some like their bacon crispier than others, so you cook them as long as you like.
That's it!!!! They are soooo delicous, simple to make and a must have on our Christmas Eve table!!! This will cover shrimp and scallops....once anyway. Before Christmas Eve is over the shrimp and scallops will make a few appearances!!!
