This recipe comes from Eunice, an excellent chef, an amazing woman, and a beautiful person. The best part about Eunice; she is my daughter's boyfriend'sMOM!!! We are so lucky to have her in our extended family. She loves to cook and loves to make these fantastic healthy and delicious snacks for Chelsea and Roger. This recipe is a twist on a brownie. Made out of mostly prunes, nuts and oats... All Good Stuff!!! It is so good, it will definitely satisfy your sweet tooth. A great treat!!
POWER BROWNIE BITES
1 POUND PRUNES 3/4 CUP DARK CHOCOLATE CHIPS 1/2 CUP FLAX SEED MEAL 1/2 CUP COCOA POWDER 3 TBLSP HONEY 3 TBLSP PEANUT BUTTER 1 CUP OF NUTS OF YOUR CHOICE ( I USED 1/2 CUP ALMONDS AND 1/2 CUP CASHEWS)
OPTIONAL ****1/3 CUP CHOCOLATE PROTEIN POWDER**** ****COCONUT FLAKES****
This is a very simple recipe. Start by putting the nuts in the food processor and let it run until they are broken down. Then add the flax seed meal followed by the cocoa powder, 1/4 cup of chocolate chips, honey and peanut butter. You can also add the protein powder at this point if you choose. Then run it until all combined and set aside.
Today, I had a little extra help from a couple of my babies. The little one is having a ball with the cuisinart....and the big one can't wait to eat!!
Next, add half of the prunes and run the processor until broken down. Then add the other half and let it run till all broken down. It will eventually form a ball that almost resembles a dough. But break it apart to even it out in the processor.
Now add the nut mixture back into the processor and let it run until combined.
Turn it out on to a piece of parchment paper and form in to a rectangle,
Melt 1/2 cup of the dark chocolate chips and spread across the top. Sprinkle with some coconut flakes and let it sit to let the chocolate dry a bit. Then pop it into the refrigerator to harden. There you go.....how easy is that???
Cut them up just like you would a brownie. They are delicious and so satisfying when you need something sweet. Thanks again to Eunice for this amazing treat.
