Salsa and chips.......everyones favorite!! I found these red, white and blue chips in the store the other day and thought, "How beautiful they would look for July 4th?" Salsa is such an easy, delicious dip to throw out for your guest. Ten minutes and a blender.....and you got a great homemade salsa...forget those jars in the store. You can really do so many different types. Today, I am going to do a Pineapple Salsa and also a Mango Salsa. I love adding the sweetness of tropical fruits to the spices of the salsa. I am also making Pulled Pork and this Mango Salsa on top of the Pulled pork is ridiculously good!!! It's sweet, spicy and savory all in one bite!! Keep an eye out for my simple Pulled Pork recipe....give them both a try. Together!!
PINEAPPLE & MANGO SALSA
2 PINTS OF CHERRY TOMATOES 1/2 OF A SMALL RED ONION 1 TBLSP FRESH PARSLEY 1 TBLSP FRESH CILANTRO 1 SMALL CAN OF DICED GREEN CHILI PEPPERS 1 SMALL JALAPENO SALT & PEPPER 1 TSP GARLIC POWDER 1 TSP OREGANO 1 TSP RED PEPPER FLAKES 4 CLOVES OF GARLIC 2 LIMES
1 LARGE RIPE MANGO 1 CAN CRUSHED PINEAPPLE OR FRESH CHOPPED PINEAPPLE
Grab your blender. Cut the cherry tomatoes in half and the onion in smaller slices. No need to really chop anything because the blender will do all of the work but since you want everything to be about the same size in the end...it is a good idea to start out with everything about the same size.
Now throw everything else in!!! The parsley, cilantro, spices, jalapeno, garlic, green chilis and lime juice. Please feel free to add more or less of anything on the ingredient list.....if you love extra cilantro...add it!! If you want more garlic....go for it!! Make it your way.
Pulse the blender a few times to get it going. You really only want to keep pulsing it until it gets to the consistency or size that your happy with. Chunky or not chunky....decisions decisions!!
So, you can enjoy your salsa just like that! It's delicious. How easy was that??? Or, you can add some tropical fruits to the party!! I love mango and I love pineapple. I could not decide, so I made both today. I like to hand chop the fruits since they are just a bit more delicate and I do not want the blender to pulverize them. I did not have a fresh pineapple today, so I used a can of crushed pineapple.
Pour the salsa into a bowl and stir in the fruit. There you go....fresh, homemade Pineapple Salsa and fresh homemade Mango Salsa. Then I got really crazy and just put them both together....fantastic.
