If you are in the mood for a taste of Fall...you are on the right page!! This is a classic Butternut Squash Soup taken to the next level. With the added flavors of apple and pear it really tastes like a Fall Festival in a bowl. This soup is soooo easy to make yet tastes like you worked at it all day. A fantastic choice for your Thanksgiving tables also.......give it a try!!
BUTTERNUT SQUASH SOUP
1 LARGE (APPROX 3 LBS) BUTTERNUT SQUASH CUBED 1 CUP DICED ONION 1 CUP DICED CELERY 1 CUP DICED CARROTS 4 CUPS CHICKEN OR VEGETABLE BROTH 3 TBLSP BUTTER 2 APPLES DICED 2 PEARS DICED 1 TSP NUTMEG SALT & PEPPER
Begin by heating the butter in a large pot or Dutch Oven. Add the onion, clelery and carrots. Season all well with salt & pepper. Continue cooking until all veggies are soft and tender.
Next, add your chicken broth or vegetable broth.......and you cubed butternut squash.
Let it all come to a simmer and cook for about 15 minutes or until the squash is also soft and tender.
Next you can add in your diced apples and pears.....it has got to be smelling pretty good by now!!! Lastly, add in your nutmeg....
Let them all cook down about 10 more minutes..... again until all are soft. Now, remove from the heat and let it cool a bit.
Now, the fun part!!! You will work in batches putting a few ladles of the soup into a blender and mixing. You can pour each batch into a large bowl until we get through it all.
It will be a beautiful smooth and creamy texture.....without any true dairy!!! Fantastic....it is all fruits & veggies....so it is so good for you. And.....its delicious!!!
I love to top mine with a spoon of sour cream. As it slowly melts into this hot soup it gives it an even creamier texture. I also love to top it with my Homemade Croutons. Gives a great crunch along side that smooth creamy texture. These are just suggestions. Make it your own and top it how you like....but let us know so we can try your ideas next!!!! ENJOY !!!!
