Today in our Junior Chef's Circle...Ellie, Angelina and I decided to work on our knife skills and do some chopping. Lots of chopping. So we made a fantastic salad....chopped everything small....and layered it all in a trifle bowl. It looks gorgeous. What a great salad to have at a party. It made sooo much so you could serve lots of people....for sure!! It also would make a great hostess gift if you bring the salad and leave the trifle bowl for the hostess. The best part.....no cooking involved. A great meal to make with your kids also. Just as Ellie and Angelina did, they can decide what they would like in it. And believe me....when they actually make it....they will love to eat it.
TRIFLE BOWL COBB SALAD
1 HEAD OF ICEBERG LETTUCE 1 PINT OF CHERRY TOMATOES 1 BUNCH OF SCALLIONS 2 AVOCADOS 1 CUCUMBER 1 CUP CRANBERRIES 4 HARD BOILED EGGS 1/2 LB BACON COOKED 1 CUP SHREDDED CHEDDAR CHEESE 4 GRILLED CHICKEN CUTLETS CUBED HOMEMADE GARLIC & PARMESAN CROUTONS
This salad is a breeze if you have some chicken leftover. Maybe you had made my recipe "Chelsea's Famous Grilled Chicken" on Sunday while you were meal prepping for the week??? That would be great...but if not...no problem. Just grab some cutlets, season with salt & pepper, drizzle with olive oil and grill!!!
Preheat your oven to 400 degrees. Next, you can prepare your delicious homemade croutons. Cut up you crusty loaf of bread into 1 inch cubes. Throw them on a baking tray. Season generously with salt & pepper, garlic powder and sprinkle over completely with some grated parmesan cheese.
Last....prepare your bacon. I bought this awesome Applewood Smoked Bacon today while I was in The Fresh Market. They have an amazing butcher section with so many wonderful choices. And if you go on tuesday....they always have their chicken sale!! But this bacaon.......crazy good!! But feel free to use any type you have on hand. So fry up that bacon and set aside to cool.
Now the girls are ready to chop, chop, chop and layer it all up in their trifle bowls. Start with the lettuce. Then I have listed everything we used in out bowls but again, use what you like. Tomatoes, scallions, avocados, cucumbers, cranberries, hard boiled eggs, bacon, chicken, cheese and croutons. If you do not like tomatoes, leave them out. Or maybe replace them with red pepper???? It's all up to you.....It's all good stuff!! Have fun with layering it....choosing your colors as you go so it looks beautiful when you are done. Just chop each item bite sized as you go.
WOW.......GORGEOUS!!!! The girls had an awesome time practicing their knife skills. Plenty of practice for one day!!! They did a great job....their salads are beautiful.
I am sure their families were happy with the profits of today's class....haha!! I know my family did....ENJOY!!!
