Here we go......the Italian Feast of the Seven FIshes. Our time is a little short since we only have 6 days left until Christmas Eve but we will do as much as we can. I guess I got a little carried away with the Christmas Cookies and desserts and cut myself short. But, as I said there are some dishes that do not even require a recipe but are must haves on the table. So it will actually be easy to get through. Our first recipe can be used as an appetizer if you make them mini or as part of your main course if you make them full size. Your choice....I usually make them full sized but today I am showing you pictures of the minis which I make for a recent party. They are bite sized, delicious and soooo easy to make. Our first fish is crab!!!!
MINI CRAB CAKES
2 1 LB CANS OF LUMP CRABMEAT 1 RED PEPPER CHOPPED FINELY 1 YELLOW PEPPER CHOPPED FINELY 1 SMALL BUNCH OF SCALLIONS SLICED THIN 20 CRACKERS (SALTINES, CLUB..WHICHEVER YOU PREFER) CRUSHED 1 TSP PAPRIKA 1 TBLSP FRESH DILL CHOPPED FINELY 1 LEMON JUICED 2 TBLSP WORCESTERSHIRE SAUCE 2 TBLSP BROWN MUSTARD 1 CUP MAYONNAISE 2 EGGS SALT AND PEPPER
Preheat your oven to 350 degrees. Can't get any easier than this......get all your ingredients into a bowl and mix. Just mix gently so not to totally break up the crab. You want it to stay in as big of pieces as possible.
Now just make your pattys....big or small. Get them onto an ungreased cookie sheet and into the oven for approximately 30 minutes depending on size. They will be a light golden brown when done. That's it......really!!!! Make room on your table for these.
