Another healthy Pumpkin recipe for you!!! If you like a little crunch once in awhile, this is a great flavored granola. Pumpkin spice!! It's everything you would expect in a Pumpkin spice but with a small sprinkle of Chili Powder for that little kick. Gives it a great twist of flavor...but if you choose, you can leave that ingredient out and just go with the great flavors of Fall in this one. Fantastic as a grab and go snack...sprinkle a bit on your yogurt for breakfast...or go a little crazy and take it from me....unbelievable on top of a scoop of vanilla ice cream....just saying!!!
PUMPKIN SPICE GRANOLA
3 CUPS OATMEAL 1 CUP CRUSHED PECANS 1/4 CUP FLAXSED MEAL 1/4 CUP ALMOND FLOUR 1/2 CUP BROWN SUGAR 1/3 CUP PEPITAS 1/2 CUP GOLDEN RAISINS 1-1/4 CUP PUMPKIN PUREE 1/2 CUP HONEY 1-1/2 TSP CINNAMON 2 TSP PUMPKIN PIE SPICE 1 TSP CHILI POWDER 1-1/2 TSP VANILLA
As you can see, there is all great stuff in there!!! And so easy to make...and it makes a lot....so you can store it in a ziplock bag and enjoy it all week!!
Preheat oven to 400 degrees!!
In a large bowl, combine the oatmeal, crushed pecans, flaxseed meal, almond flour, brown sugar and pepitas!!
Now, in a smaller bowl, mix together the pumpkin puree, honey, cinnamon, pumpkin pie spice, chili powder and vanilla......
Just pour this into the oatmeal mixture and mix well.....
Lay it all out on an ungreased baking sheet and let it all roast in the oven for about 20 to 25 minutes....turning half way through to brown all evenly. Keep a close eye on it though you do not want it to burn so depending on your oven....and your taste...bake as long as you desire!!
Wow...doesn't that look delicious!! And wait till you taste it...crunchy, sweet, salty & spicy!! It's got it all going on!! Give it a try...and like I said, especially if you are making this for kids, just leave out the chili powder if you prefer. Or go half way...it's all up to you. Make it your own.....ENJOY!!
