I will just say that in my house, this is one cookie that I am not allowed to mess with. I am always trying to make this better, different or just change things up. But not this one. My son and my daughter would have my head!!! It is a soft chewy cookie with a Reese's Peanut Butter Cup on top. I am sure you have seen them all over the place, it is not an original creation but deserves the recognition for sure. It is always on my cookie platter, and requested many times during the year by them both. If you are a peanut butter lover.....this is the cookie for you!!!!
PEANUT BUTTER CUP COOKIES
1/2 CUP BUTTER 3/4 CUP PEANUT BUTTER 1/3 CUP WHITE SUGAR 1/3 CUP BROWN SUGAR 1 EGG 2 TBLSP MILK 1 TSP VANILLA 1 1/2 CUPS ALL PURPOSE FLOUR 1 TSP BAKING SODA 1/2 TSP SALT
EXTRA SUGAR FOR ROLLING REESE PEANUT BUTTER CUPS
Preheat your oven to 350 degrees,
Start by creaming the peanut butter along with the butter........
Next, add both sugars and mix until light and fluffy.....
\ Now add the egg and vanilla and milk.......
Sift the flour, baking soda and salt together and add in small additions mixing well in between......
You can wrap the dough at this point in plastic wrap and store in the refrigerator for a couple of days until you are ready to use it......
But when you are ready to bake some cookies just roll the dough into 1 inch balls and lay on a parchment paper lined baking sheet.....
Bake at 350 degrees for 12 to 14 minutes.....
As soon as they come out of the oven push a Reese's Peanut Butter Cup into the middle. Let it melt a few minutes in the cookie and then you will be able to push it down a bit more.
Lastly, you can decorate them if you want, I am decorating them for my Christmas Cookie Platter. They look beautiful. They taste amazing!!! Soooo simple to make.....why mess with perfection?????
