I'm not sure how happy I am that January is here. But a new year has begun, and it is time to turn the tables on my recipes back to light and healthy foods. I have to say that my favorite time of year to cook is the fall. Sooo many great flavors, warm comforting foods. And then Christmas....and COOKIES!!!! It's kind of like waking up in the morning....I need some time!! Haha. But here we are, January!!! It is time to let it go, get off our butts, lighten up our meal and start this year off right.
I created this recipe for my daughter Chelsea. If it is Chelsea approved, we are good to go!! It will definitely satisfy your sweet tooth while giving you some protein and "ALL GOOD STUFF" !!! A great sweet treat....give them a try!!
COCONUT BANANA PROTEIN MUFFINS
1/2 CUP WHEY PROTEIN 1 CUP ALMOND MEAL 1/3 CUP FLAXSEED (OR FLAXSEED MEAL IF YOU PREFER) 1 TSP BAKING POWDER 1 TSP BAKING SODA 1/2 TSP SALT 1/3 CUP COCONUT OIL 1/2 CUP ALMOND MILK 1 TSP COCONUT EXTRACT 2 BANANAS MASHED 1/2 CUP DARK CHOCOLATE MORSELS
Preheat your oven to 350 degrees.
Begin by getting the dry ingredients into a small bowl. Whisk together the whey protein, almond meal, flaxseed, baking powder, baking soda and salt. You can substitute the flaxseed for flaxseed meal. The only difference is it is ground and you will not have the whole seeds in there, Using the regular flaxseed will add a bit of a crunch but the choice is totally up to you.
In another bowl, add the coconut oil and the egg and beat together......
Add the almond milk and dry ingredients in small additions until combined.
Mash the bananas in a bowl...
Add the bananas and chocolate chips in and again mix just until combined....
Spray a muffin pan with cooking spray and fill each cup 1/2 way....
Bake for 16 to 18 minutes at 350 degrees or until a toothpick comes out clean.
Let them cool and.......enjoy!!!!
These are healthy and sweet. Mix up a bunch of these and you will have a great satisfying snack all week!!!
