Get ready for this one!! First, don't eat for days before so you will be good and hungry!! These are my BFF Lisa's Famous Corn Fritters!!! They are amazing and ridiculously addictive!! Both of our families go crazy when we say it's Corn Fritter day. Normally, we do this on Apple Picking day in the fall, so we can also do Apple Fritters for dessert....YUMMMMM!!! But today, they are here at the shore for our annual summer adventure. Look at what this guy walks in with.....
Let's just say.....he takes his corn seriously!!!
WOOHOO!!! This corn is soooo good. Art brought it from the Depiero's Farm Market in Montvale, NJ. His (and everyone's) favorite place to get your fresh corn!! So, we will make lots of sweet corn for our first meal together, a BBQ, of course. Then we will have plenty left over to make our fritters!! So here is the recipe that Lisa uses. It would probably make about a dozen fritters....if you could believe it... we times this recipe by 8 for our families!!!! We probably ate about 100 fritters....that's how addictive they are!! So be prepared to make more once you start.......
CORN FRITTERS
2 CUPS OF CORN (CUT OFF THE COB) 1 CUP FLOUR 1/2 CUP OF MILK 1 TSP BAKING POWDER 1 TSP SALT 1 TSP VEGETABLE OIL 2 EGGS
VEGETABLE OIL FOR FRYING POWDERED SUGAR
Again, you will see in my pictures, we made a massive amount. But start with cutting your corn off the cob and getting it onto a tray lined with paper towels.
Break up the pieces that are in clumps with your hands. Cover the top with another layer of paper towel and gently squeeze the water out. Lisa likes to do this and then let it lay out covered in the paper towels for a few hours to draw out as much moisture as possible before making them. It is extremely important to do this because when moisture hits the hot oil...it will pop and splatter so you want as much moisture out as possible. Look at this beautiful lady....she puts lots of love into those fritter!!
When you are ready...start heating your oil. We used regular vegetable oil in my dutch oven. It works perfectly. If you have a deep fryer....go for it!! You want to make sure the oil is good and hot...we let it come to about 340 degrees when we start dropping the batter in......
While the oil is heating up...you can make the batter. It could not be simplier. Just get all the ingredients except the corn into a large bowl and mix well. Add the corn last and just fold into the batter.....that's it!!!! Ridiculously easy!!! Nothing to it!!!!
It will become a beautiful batter!!!
Now....be very careful....drop a small cup full into the oil. I used a 1/4 cup measuring cup to scoop it and drop it. They were a great size.....
You can drop about 5 or 6 at a time but do not over crowd your pot or they will get stuck together. When you drop your batter it will fall to the bottom but then almost immediately rise to the top. That will tell you that your oil is hot enough in case you do not have a thermometer.
Yes....they will come out all different shapes and sizes. There are no two fritters alike...haha!! They will brown very fast so keep a close eye on them. Give them only a minute or two and flip to brown the other side. They go very fast, but to know when they are done ........cut the first one or two open to make sure the inside is done and not still goey. Then you will have a good idea of how brown they should be when they are done.
Lay them on a paper towel when they come out and then almost immediately get them into a bowl with powdered sugar!!! HEAVEN!!!!!!

They are amazing.....take my word for it. And it's great family fun....we all sit around the table and fight over who gets the next batch coming out. Because....you need to eat these immediately....hot out of the pot....sooo goood !!!! Actually, today, we did a music trivia game, and who ever got the question right....got the next fritter.
