This is such a quick, easy, delicious dip to make. Everyone loves hummus. A plain hummus is always great, but I like to use it as a base, then add all sorts of different flavors to it. There are so many types you can make. Today, very simply, I decided to use garlic and a can of artichoke. It was fantastic. Throw some pita chips or beautiful cut up veggies on the side and... you've got an great appetizer or quick snack in 5 minutes! Can't beat that. My daughter also loves to put this on top of her grilled chicken. It is sooo good. Adds so much flavor and is so good for you.
ARTICHOKE HUMMUS
2 CANS CHICK PEAS 1 CAN ARTICHOKES (IN WATER - NOT OIL) 3 CLOVES OF GARLIC HANDFUL OF GRATED PARMESAN CHEESE SALT & PEPPER OLIVE OIL
Put all ingredients in a food processor, except the artichokes. Let it run till smooth. I like to put the artichokes in last because I like to leave them a little chunky so you get pieces in each bite and you know it's there. Just pulse in the artichoke at the end until the pieces are the size you want.
I also like to add some fresh chopped parsley on top with and extra drizzle of olive oil. So easy, so delicious, so good for you. Grab a bag of the Stacy's Pita Chips or cucumbers while you are at the store....they are great with hummus, but what you choose to scoop your dip with is totally up to you! The possibilities are endless. Don't forget...try it on top of your grilled chicken!! It's one of Chelsea's favorites!!
