This is an amazingly flavorful dish that pairs well with pretty much anything...or on its own with some Tostitos Scoops tortilla chips!! It is fantastic on top of an omelette or fritatta. It's delicious with grilled chicken or any fish dish... my favorite pairing is grilled shrimp or crab cakes...yum!! Change it up by substituting the mango for pineapple, peaches. Try to grill your fruits firsts or add no fruit at all. However you like it... don't be afraid to change it up! It's so much fun to play with this one. AVOCADO MANGO SALSA
5 AVOCADOS
2 MEDIUM SIZED MANGO
LARGE HANDFUL OF CHERRY TOMATO
1/4 CUP CHOPPED RED ONION
1 LIME JUICED
1 TBLSP FRESH CILANTRO CHOPPED
2 TBLSP OLIVE OIL
SALT & PEPPER
Start with some beautifully ripened avocados, as I did. You do not want them over ripened because in this recipe they should be diced. Not smashed as you would for a guacamole.
Start by scooping them out and dicing about 5 avocados. Leaving pretty chunky.
Next, dice up the mango, red onion and cherry tomatoes. I love to use different color tomatoes in this like the yellow and dark red. Such a colorful dish...beautiful!!
Add the olive oil, juice of one lime, cilantro and salt and pepper to taste. Stir gently!!
That is it!!!! It is so colorful, delicious..and for Chelsea..HEALTHY!!! And best of all..for me...EASY!! Remember, to store this, press a piece of plastic wrap on the top to remove any air, then wrap the whole bowl again. It will stay beautiful in the refrigerator for tomorrow's breakfast or your next meal. Be creative... make it your own... the way you like it. Enjoy!!
