Let's talk LAMB!!! Baby lamb chops has got to be one of my favorite foods ever. To me the flavor of lamb is amazing all on its own. If you think your not a lamb person...you should really try it again. But more importantly, they hold the fondest memories for me. When I was a little girl, and my grandmother would ask me what I wanted for dinner, I would usually say lamb chops. Now I loved lamb chops but remember that it was more about cooking the lamb chops then it was eating them. That is because all you needed to do was rub the chops with olive oil and season with salt and pepper. She always told me that lamb was such a beautiful flavor that you didn't want to cover that up with too many ingredients or spices. So this was something that at the age of probably five, I could do all by myself cause how easy is that. And, of course, she would love to let me. So away I went, rubbing them with the oil, seasoning with the salt and pepper, and putting them on the rack to go into the broiler. I seriously thought....I AM A CHEF!!!
She was absolutely right about the way to treat a lamb chop and that is, for sure, they way I still love them today. These chops are one of the simplest thing to make, even a five year old can do it. Kids will love them because they are so tiny. They can pick them up with their hands....so much fun to eat. I hope you will make these and enjoy them with your families just as much as the joy I get out of them every time I make them and think about my grandma!!! And get those little chefs inspired!!
BABY LAMB CHOPS
Place the baby chops on a rack in a roasting pan or cookie sheet.
Rub with olive oil and season generously with salt and pepper. Put under the broiler for about 25 minutes and turn over for another 25 minutes. I happen to like mine pretty well done. some people like them more rare so you can adjust the cooking times as needed. These are amazing...enjoy!!
