I love, love, love Banana Bread. It is just such a great moist and delicious cake. and it's just as good when you turn it into a muffin!! My son's friend Dominic is a huge fan!! He likes it just like I do....with lots of chocolate chips on top. When I went on my webpage and found a request for Banana Chocolate Chip Muffins, I knew exactly who it came from.... I was right, thanks Dominic!! So, here's that banana chocolate chip flavor again....this time as a muffin!!
BANANA BREAD
1 CUP SUGAR 1/3 CUP BUTTER 4 RIPENED BANANAS 2 EGGS 1/3 CUP VEGETABLE OIL 1 2/3 CUP FLOUR 1 TSP BAKING SODA 1/2 TSP BAKING POWDER 1/2 TSP SALT CHOCOLATE CHIPS FOR TOP
*** This recipe will make approx 12 large muffins. I like to use the jumbo muffin tins.
So first, you peel and put all your bananas in a bowl and mash them up!!
In a small bowl, sift together your flour, baking powder, baking soda and salt.
In a larger mixing bowl or a stand-up mixer, cream the sugar and butter until smooth and fluffy. Then add eggs one at a time and mix. Add oil and bananas. Then flour mixture slowly while it mixes until all incorporated. Fill cupcake tins lined with paper cups and top with chocolate chips. Lots of chocolate chips!!! And then some more chocolate chips!!
Bake for 45 minutes or until inserted toothpick comes out clean. Serve this to your kids for breakfast...they will love you!!. There's bananas in it...it should qualify as breakfast!! I think for Dominic they qualify for breakfast, lunch, dinner and anything in between.
