I love making barbecue pizza!! It is usually a staple and one of the biggest requests in the summer. I love throwing what ever I have in the frig on top. We have made so many from pulled pork pizza to vegetable pies. My two favorites are Margherita and Arugula with proscuitto. But pretty much anything on top of a pizza is fantastic, so you decide. Today we will go with Barbecue Margherita!!
Here's my big secret....go to your local pizza shop and buy the pizza dough. Most places will sell you the dough and it will save you a huge amount of time. But...make your own sauce. Try my recipe for pizza sauce. Now, I no opening a jar is easier also, and if you are in a real rush then go for it. But you can make this sauce ahead of time and store it in the frig and fresh sauce does make a big difference.
BARBECUE MARGHERITA PIZZA
1 PREPARED PIZZA DOUGH 2 CUPS OF PREPARED PIZZA SAUCE I WHOLE FRESH MOZZARELLA 2 TOMATOES SLICED THIN HANDFUL OF FRESH BASIL TORN INTO PIECES FRESH SHAVED PARMESAN CHEESE OLIVE OIL
Prepare all of your ingredients that will go on top of the pizza. Slice the mozzarella, the tomatoes and tear the basil. Have your pizza sauce warmed up and ready. Lastly, shave your parmesan cheese. On this pizza, it is nicer to shave instead of grating. The flavor is amazing. Put all on a tray with some olive oil and a brush.
Now grab your pizza dough and cut it into fourths.
Stretch each piece thinly to about triple it's size.
When all four are done, you are ready to go to the grill. Have the grill heated to about 400 degrees.
Brush one side of the stretched dough with the olive oil and put that side down on the grill. When you get all four on, close the top. They will only take about 4 minutes on this side but use a pair of thongs and check because it all depends on your barbecue. And make it as brown or not brown as you like.
When they are ready, turn them over and spoon on some of the pizza sauce. Then add a layer of tomatoes and some fresh basil.
Next, add the shaved parmesan and some mozzarella. Close the lid again and let it cook just until the cheese is beautifully melted.
Make that for dinner tonight!!! Or lunch...or snack!! ENJOY!!
