This is an awesome recipe that I got from a greek friend of mine many years ago, after all this time, it is still a family favorite!!! It is tender and delicious pork tenderloin marinated in loads of garlic, lemon and oregano, then bbq'd and topped with mounds of mushrooms and onions and drizzled with more lemon, oil and oregano!!! WOW!!! Are you ready for this?? And the best part...its "Cheech Approved" that means my daughter says it healthy, woohoo!! Low in calories and carbs, all good stuff!!!
BBQ PORK TENDERLOIN
FOR THE PORK 1 PKG PORK TENDERLOIN (EACH PKG USUALLY CONTAINS 2 TENDERLOINS) 1 WHOLE HEAD OF GARLIC 2 LEMONS 1/2 CUP OLIVE OIL 3 TBLSP OREGANO SALT & PEPPER
FOR THE MUSHROOM/ONION TOPPING 2 PKG MUSHROOM 1 LARGE ONION 3 TBLSP BUTTER 3 TBLSP OLIVE OIL SALT & PEPPER
FOR THE DRIZZLE 2 TBLS OLIVE OIL JUICE OF 1 LEMON 1 TBLSP OREGANO
You will need to marinate the pork tenderloin very early in the morning or the night before. Night before is always better! Place tenderloins in a zip lock bag to marinate. It is really nice to do this the day before because then all you have to do is throw them on the grill and saute the mushrooms and onions. Piece of cake!!!
Now get out that Pampered Chef Garlic Slicer that I'm hoping you have all bought by now. Peel and slice all of the garlic and throw it all into the bag.
Add the juice of the 2 lemons, oil, oregano and season well with salt & pepper.
Squish it all around with your hands to get it all covered in there. Refrigerate while marinating. But leave out for a bit before you are ready to grill. Never cook very cold meat.
After we have been marinating for a good long time, light your grill and get the pork on. You want to grill this "low and slow" so it cooks through evenly. I actually made 2 pkgs today (4 tenderloins) because I was feeding a lot of people. These will probably take a good 45 minutes to cook through. Turn to brown on all sides.
While you are grilling the pork....you can prepare your mushroom and onions. First wash and slice your mushrooms. You can use any type you like....I love to use Baby Bellas. Then you can slice your onions,
Now, heat the butter and oil in a large saute pan and add the mushrooms and onions right in. Saute about 15 minutes or until all are cooked through and soft. I like to cook this on a high flame for the last 5 minutes or so to almost blacken the mushrooms a bit.
Ok...go check your grill,,,,,I think you are going to be soooo happy. Just look at those babies!!
When you are sure they are done, you can take them off, place them on a cutting board and let them rest for about 10 minutes. Then slice them up thinly and put all the meat on a giant platter and pile those mushroom and onions on top!!
Is that gorgeous!!! Now just mix up the drizzle....oil, lemon juice and oregano and drizzle all over the top for some added moisture and flavor. Just in case there is not enough...haha!! The great part about this recipe is it makes a lot!!! Great for a party or bbq get together. I actually only sliced up 3 tenderloins so far and my platter runneth over!!!! YUMMMM!!! ENJOY!!!
