I call this "Breakfast Potatoes and More" because it is just soooo much more. Potatoes, sausage, peppers, onions and mushrooms......awesome!!! I like to put everything in my breakfast potatoes. There is so much going on in your potatoes, that plain eggs will be just fine on the side, or on top!!!
BREAKFAST POTATOES & MORE
4 BAKING POTATOES 2 RED PEPPERS (I USED ORANGE AND RED ACTUALLY) DICED 1 MEDIUM ONION DICED 6 LINKS OF SWEET ITALIAN SAUSAGE 1 PKG MUSHROOM SLICED 1 TBLSP FRESH CHOPPED SAGE 1 TBLSP FRESH CHOPPED ROSEMARY 3 TBLSP OLIVE OIL 3 TBLSP BUTTER SALT & PEPPER
I like to do this first part the night before. It is very easy to do yet it does make the next mornings preparation so much easier and quicker when you have lots of hungry kids around. Also, the potatoes are so much easier to work with and dice up when they are cold.
Preheat your oven to 400 degrees. Wash your potatoes. Cut them into strips, just like fries, and lay them onto a baking tray. Drizzle them with olive oil and season with salt & pepper.
Next, put your sausage in the oven at the same time. Drizzle with olive oil. They can both cook for about 45 minutes together. I grabbed some cheese and parsley sausage at the store. You can use any type...these just bring more flavor to the party.
Good morning!!!!! Now we are ready to put this together....Grab a large saute pan. Start by heating the butter and oil in the pan. First, add in the diced onions as well as the diced peppers. I used one orange and one red for color. Season all well with salt & pepper. Let it simmer until veggies begin to soften about 10 min.
Next, finely chop your sage and rosemary and add it in. This little step will bring the whole dish to a new level, giving it such flavor and aroma.
Now, add in the washed and sliced mushrooms. Let this cook another 10 minutes.
You can slice your sausage and get that into the pan next.
And last but not least....the potatoes. So since we have cooked them in strips it makes it so simple to dice them. Just grab a handful and chop them up.
When you add the potatoes into the pan....kick up the heat. Let these cook on a high heat so they brown nicely. I like mine almost burnt. But let them go till they are just how you like them.
WOW!!! Doesn't that look delicious???? What hungry guy would not love that?? I like to pile this high on a dish to serve...it's an impressive mountain!! We call these Breakfast Potatoes but you can serve these at any BBQ or dinner also. It is a great dish. And remember....make it your own. Substitute or change any part you may want to. Take the sausage out for your vegetarian friends or make it bacon or ham instead.....IT'S ALL GOOD STUFF!!!! ENJOY!!!
