Buffalo chicken is definitely a fan favorite....and for sure one of my son's favorites. So I decided to bring this flavor together with my favorite....meatballs!! It is basically everything you would assume....chicken, celery, wing sauce, blue cheese...all rolled up into one ball!! My son was very happy with the result...haha give it a try!!
BUFFALO CHICKEN MEATBALLS
2 LBS GROUND CHICKEN 1/2 CUP CHOPPED CELERY 1/2 CUP CHOPPED ONION 1 EGG 1/4 CUP BUFFALO WING SAUCE 1 CUP SHREDDED CHEDDAR CHEESE
FOR THE DIPPING SAUCE 1/2 STICK BUTTER 1/2 CUP BUFFALO SAUCE 1/3 CUP CRUMBLED BLUE CHEESE
Let me start by saying.......
Sweet Baby Ray's Sauces are my favorite!!! You can make your own wing sauce with hot sauce and butter....but why mess with perfection??? Grab yourself a bottle. It is that easy and soooo goood. We all want great...and we all want easy.
Preheat your oven to 400 degrees. In a large mixing bowl, add in all of the ingredients listed for the meatballs.
Now, just get in there with your hands and mix well. Roll into small balls and place on baking tray. I like to use parchment paper simply because it makes clean up easier.
Bake for 40 minutes..........
To make the sauce.....grab a small sauce pan. Heat the butter and wing sauce just until hot. Add the crumbled blue cheese and remove from heat. It will slightly melt into the sauce but remain chunky.
Now just plate.....pour some sauce over the top and place some in the middle for extra dipping. ENJOY!!! ALL GOOD STUFF!!!!
