Cauliflower, cauliflower, cauliflower....it is the hot vegetable trending these days and brussel sprouts are just my favorite....so I decided to combine the two, I have another recipe that is very similar except I use Quinoa instead of the cauliflower. The cauliflower rice in this dish is delicious and so full of nutrition. Both ways are super healthy and delicious......you gotta try them!!!
CAULIFLOWER BITS & BRUSSEL SPROUTS
1 HEAD OF CAULIFLOWER BIG BUNCH OF BRUSSEL SPROUTS 1 WHOLE HEAD OF GARLIC SLICED 1/2 CUP PARMESAN CHEESE OLIVE OIL SALT & PEPPER
Clean and cut your brussel sprouts. I like to cut them in quarters or almost shred them.
Prepare your cauliflower rice. Cut the head of cauliflower into smaller florets. Put a handful at a time into your food processor and pulse to break down until it resembles rice.
Now you can heat about 3 Tblsp of olive oil in a large saute pan. Add the brussel sprouts and begin to cook over a medium heat. You may need to add a bit more oil to coat. As they start getting tender, you can add your sliced garlic. Turn up the heat for a few minutes....it's nice to blacken it a bit!!!
Add your cauliflower rice next!!
Let it cook all together for about 10 minutes or until the cauliflower is beginning to soften. I like it still with a bit of a crunch but its totally up to your taste. At the last minute though....you can season it all with salt & pepper and add the grated cheese.
You are now ready to eat!!! Grab a bowl...it is a great lunch all on its own. Or super healthy also with some grilled chicken or fish!!! ENJOY!!!!!
