OH......what a dinner you can turn a plain old head of broccoli into!!! Pasta with broccoli is a delicious dish for sure....but when you use Cavatelli....WOW!! I love love love this. So simple, but I think that's the beauty of it. You can never go wrong with a plate of pasta with garlic and oil. The only extra ingredient....the broccoli. Simple, simple, simple!! And always a winner!! And will take 15 minutes to make....don't get any better than that....
CAVATELLI & BROCCOLI
1 LARGE HEAD OF BROCCOLI 1 WHOLE HEAD OF GARLIC SLICED OLIVE OIL SALT & PEPPER 1 TSP RED PEPPER FLAKES 2 BAGS OF CAVATELLI FRESH GRATED PARMESAN CHEESE
You will be preparing the Cavatelli as directed on the package but cooking it just shy of suggested cooking time. Leave it Al Dente, because it will cook for the last minute or two in the saute pan with the broccoli.
By the time you salt & boil the water ......and cook the Cavatelli....your broccoli will be ready. This is the brand I usually use.
Before you drain your pasta...please do not forget to reserve a cup of the starchy, salty pasta water. You will need this to bring it all together.
In the meantime, grab your Pampered Chef Garlic Slicer, hopefully you have bought one by now....And slice up that garlic!! Along with that you can quickly cut up your broccoli into tiny florets.
Get it all into a large saute pan and add about 1/3 cup of olive oil. Season all with salt & pepper and about 1 teaspoon of red pepper flakes. Saute it all for about 10 minutes or until the broccoli is fork tender.
Add the cooked pasta to the broccoli mixture.....
Add the reserved pasta water.
Mix together while allowing it to continue cooking for just a another 2 or 3 minutes. Top with about 1/4 cup of Fresh Grated Parmesan Cheese. And, maybe a little extra on top of your plate.
Look at this .....I can't think of a better way to eat broccoli. Can you??? ENJOY!!! ALL GOOD STUFF!!!
