What a great idea! Whoever thought about using a leaf of lettuce as a wrap was a genius. It's simple. It's light. It's healthy and delicious. This is just a simple Asian style marinade that is very quick and easy to put together a couple hours ahead of your meal. You can also make a whole lot of it for a party, it looks beautiful on the table and people love it.
CHICKEN LETTUCE WRAPS
3 LBS BONELESS CHICKEN BREASTS 1 WHOLE BUNCH OF SCALLIONS SLICED 1 SMALL RED ONION SLICED THIN 6 CLOVES OF GARLIC CRUSHED 2 TBLSP FRESH GINGER GRATED 1 CUP SOY SAUCE 1/2 CUP HOISIN SAUCE 5 TBLSP RICE WINE VINEGAR 2 TBLSP SRIRACHA 4 TBLSP SESAME OIL 1 HEAD OF SHREDDED RED CABBAGE 2 CUPS OF SHREDDED CARROTS

SHREDDED CARROTS SLICED SCALLIONS CRUSHED PEANUTS LETTUCE - I USED A BUTTER LETTUCE, ICEBERG AND RED RADICCHIO
Start by slicing your chicken breasts into little thin strips as shown.
Next, gather all your ingredients. Slice your onions and scallions.
Put the chicken in a large mixing bowl and add each ingredients on at a time except for the shredded carrots and shredded cabbage. Mix together, cover and refrigerate for a couple of hours.
After it has been in the marinade for at least a couple of hours, take out of the refrigerator for about 45 minutes. It is always best for your meat to sit out a bit before you cook it.
Work in two batches here cooking half of the bowl of chicken at a time. Over a high heat, cook/fry the chicken stirring frequently until cooked through. Add half of the shredded carrots and half of the shredded cabbage to the pan and continue cooking about another 10 minutes until veggies are tender.
That's it!! Now just remove you lettuce leaves without tearing them!! I also put some extra shredded carrots, scallions and crushed peanuts in bowls for topping the wraps. It is great to have an extra crunch on top.
Don't forget the Peanut Sauce for a topping! Here it goes...
PEANUT DIPPING SAUCE
1 CUP PEANUT BUTTER 4 TBLSP RICE VINEGAR 1/4 CUP SOY SAUCE 1/4 CUP WATER 1 TSP FRESH GRATED GINER 2 CLOVES OF GARLIC MINCED 3 TBLSP BROWN SUGAR
Just whisk it all up in a bowl but taste it. If you like more ginger, garlic or sugar, go ahead and add it. You can also substitute honey for the brown sugar if you prefer.
