Icebox cake has been a family favorite for years and years. It is definitely always the cake my son requests for his birthday, and any time he gets a choice...haha!! I always made it with the "Famous Chocolate Wafers"....until I saw this. I was watching a great show on Food Network called "Farmhouse Rules" with Nancy Fuller. She used these chocolate chip cookies instead.....oh man!!! I knew I had to try this. Well it is unbelievable. The recipe for these cookies is fantastic. They make a perfectly thin & crisp cookie that you need in this cake.....sooo good!! Besides making the cookies, all you have to do is whip the heavy cream and throw it together. You can make the cookies ahead of time to make it easier if you like.
CHOCOLATE CHIP COOKIE ICEBOX CAKE
FOR THE COOKIES
2 CUPS OF FLOUR 1 TSP SALT 1/2 TSP BAKING SODA 2 STICKS OF BUTTER, ROOM TEMP 1 CUP PACKED BROWN SUGAR 1 CUP SUGAR 1 TBLSP PLUS 2 TSP VANILLA EXTRACT 2 LARGE EGGS, ROOM TEMP 2 1/2 CUPS SEMISWEET CHOCOLATE CHIP COOKIES
FOR THE CREAM
3 CUPS OF HEAVY CREAM 1/4 CUP POWDERED SUGAR
Preheat your oven to 350 degrees.
In a medium bowl, sift together the flour, sat and baking soda.
Using a stand up mixer, cream the butter with the brown sugar and white sugar until light and fluffy. Add 2 tsp of vanilla extract and the eggs until all blended. Lower the speed and add the flour mixture slowly until all combined.
Last....add the chocolate chips!!!
Drop in teaspoon sized balls into a prepared baking sheet. Bake approximately 12 minutes or until golden brown.
Now just transfer them to a cooling rack. You can store them until you are ready to build this cake....if you don't eat them all first!!
For the cream....just whip on high speed the heavy cream, the powdered sugar and the 1 Tblsp of the vanilla.
When you are ready to build.....simply layer the cookies flat, spread a layer of the cream....and keep going....till it looks like the most beautiful cloud of cream....you ever saw!!!!
I made this cake for my daughter Chelsea's Birthday this week. She loved it!! Everyone loved it....what's not to love??? Her standard pick is Carrot Cake. So. of course, I made Carrot Cake Cupcakes also...keep an eye out for that recipe!! You won't want to miss that one. But in the meantime....take a look at this creation.....AWESOME!!!!!!
