Back to school!!!! UUGHHHH!!! It's a bittersweet time of year. I'm sure plenty of us are happy to be back into a routine....our kids are busy in school, sports and activities. But there is definitely that other side of living by a schedule, homework, sports, rush...rush...rush!! OMG.....I miss summer already!!! And it's only September!!
So I thought you might like some new ideas for back to school lunches. I know PB&J is always a good option but not if you are feeding a 14 yr old High School student.....OMG I can not believe I just said High School!!! Yes I think I did. CJ begins freshman year this year as well as his first year on the high school football team who practices after school everyday till about 630pm. So I like to send him with a great lunch to get him through the day since he is not a good breakfast eater. His favorite is definitely what we will start with....this Buffalo Chicken Wrap. And since today is Tuesday...thank you Linda for the reminder...I will run to The Fresh Market Chicken sale that I always talk about and stock up on lots of chicken. Protein, Protein, Protein!!! Perfect for CJ!! We will start by preparing some chicken fingers. Let's do lunch!!!
I am not going to specify how much of each here. It all depends on how much you are making. Do yourself a favor and after you go to the chicken sale...fry up plenty of chicken tenders so you will have enough for the week. You can use them in different wraps...salads...or just send them plain, wrapped in foil with some dipping sauce on the side. Also, great for an after school snack.
Just heat your oil in a large saute pan. Set up your stations of whisked eggs in one bowl and a 50/50 mixture of the bread crumbs and panko in another. Go ahead and dip...roll..and fry!!
Let's get started!! Dice up your chicken. I usually use two tenders for each wrap.
Throw all the chicken in a bowl and mix with some Buffalo Wing Sauce. CJ loves Sweet Baby Rays so that's what I use. Go ahead and put as much or little as you like.
Next, put down a nice layer of shredded cheese on your wrap. Cj likes his hot so I melted it in the microwave.
Add the chicken on top!!
Drizzle some Ranch Dressing on top!!
Now...a layer of shredded lettuce.
Now, let's wrap this up!!! Fold both sides in and roll it up tightly!!
If yours is hot ...just roll it up in foil and it should stay warm enough till lunch.
So there it is....CJ's favorite wrap. Simple and delicious. They are great for school lunches....make in bulk for parties...or a girls luncheon. Remember, make it your own. Add, remove or change anything you want...just let us know your ideas!!
