A friend of mine shared this recipe with me a very long time ago when I lived in Miami. It was something that I made all the time because it was very inexpensive and easy to make. I love it because you throw it all in the crock pot in the morning and then it's ready when you get home from work! You can add any vegetable you have in the fridge. Really... potatoes, zucchini, broccoli, whatever you have, throw it in. For this recipe, I am using thighs and legs, but please switch it to breasts if you prefer. I am showing you the base today, but as I always say, make it your own!!! Do what you want!!
CROCK POT CHICKEN & BEER
6 CHICKEN LEGS 6 CHICKEN THIGHS 1 1/2 CUPS CHOPPED CARROTS 1 1/2 CUPS CHOPPED CELERY 1 LARGE ONION CHOPPED 1 28 OZ CAN OF CRUSHED TOMATOES 1 BOTTLE OF BEER ( OF YOUR CHOICE) 2 TBLSP FRESH CHOPPED PARSLEY SALT & PEPPER
Place the chicken in your crock pot. Followed by the chopped carrots, celery and onion.
Add the can of crushed tomatoes and the bottle of beer.
Season all well with salt & pepper and add the fresh chopped parsley. Mix it all up well!!
Put the lid on....set it on high heat...and let it cook for about 8 hours.
Just before its done you can make some rice to put it on top of. Mashed potatoes are also delicious with this chicken. This chicken will just fall off the bone, it is soooo good.
Grab a plate and ENJOY!!!!! It's all good stuff!!!!
