This is an awesome and beautiful appetizer for a dinner party or a luncheon with a salad. It seriously takes like 15 minutes to make and is sooooo good!!
EGGPLANT STACKERS
2 MEDIUM EGGPLANTS 4 RIPENED TOMATOES FRESH MOZZARELLA
Preheat your oven to 475 degrees. Start by spreading some olive oil on a cookie sheet.
Skin and slice your eggplant in rounds. Place them on the cookie sheet and move around to coat in oil.
Now slice your tomato and place them on the cookie sheet all together. Season all with salt & pepper.
Roast in the oven for about 15 minutes. Take out and make the stacks. Starting with an eggplant slice...then place a tomato slice on top...then a mozzarella slice. Do this all again until built in to a beautiful stack.
Put it back in the oven just until the cheese is all melted. Amazing!!! Next, try something different...sometimes I add roasted peppers or proscuitto. Or using zucchini instead of eggplant is delicious also. Remember.....It's all good stuff. Of course it's gonna be good!!!
