MMMMMMM........This is sooooo delicious!! I love fish...but I absolutely love a filet of fish with something so flavorful on top...like my Sun Dried Tomato Pesto!! FILET OF SOLE WITH SUN DRIED TOMATO PESTO
2 LBS OF FILET OF SOLE PREPARED SUN DRIED TOMATO PESTO 1 LEMON OLIVE OIL PARSLEY FOR GARNISH
Preheat oven to 350 degrees. Lay your fish on a baking tray that has been prepared with a drizzle of oil. Then drizzle some more oil on top of the fish.
Squeeze the juice of the lemon all over the fish and top with a couple of tablespoons of the Sun Dried Tomato Pesto.
Bake at 350 degrees for about 30 minutes or until fish is fork tender and flaky white. You can put the oven on broil for a couple of minutes to give it a little crisp on top if you like. You can also add a little more pesto on top when you are ready to serve, or on the side. Top with some fresh chopped parsley and....ENJOY!!!
