Here they are!!! The recipe that so many have been waiting for. These are an amazing little snack that are definitely worth the try!! They are a perfect treat for when that sweet tooth kicks in but are packed with protein so no need to feel guilty. I keep them frozen so they are a great substitute for that bowl of ice cream at night that we all love or just that little afternoon treat. Or if your like me....breakfast always works too!!! Sorry...couldn't help myself!!
This is a no bake recipe and is all done in a food processor so they are so easy to make. If you don't have a food processor then you will get a good work out. You can definitely crush the nuts and just mix..mix..mix..away!!
FROZEN PROTEIN BALLS
1 CUP PEANUT BUTTER (OR ALMOND BUTTER) 3 TBLSP COCONUT OIL 2 TBLSP AGAVE 1/2 CUP ALMONDS 1/2 CUP CASHEWS 1/2 CUP COCNUT FLAKES 1/4 CUP CHIA SEEDS 3 SCOOPS OF PROTEIN POWDER 1/2 CUP DRIED FRUIT (CRANBERRIES..BLUEBERRIES....ETC) 1/4 CUP DARK COCOA POWDER
****GO AHEAD AND CHOOSE ANY FRUIT YOU LIKE OR A MIXTURE OF THEM ALL. YOU CAN ALSO SUBSTITUTE ANY NUTS YOU MAY PREFER LIKE PEANUTS, WALNUTS, PECANS...ETC. YOU GET THE IDEA. MAKE IT YOUR OWN!!
YOU WILL ALSO NEED EXTRA COCONUT FLAKES AND CRUSHED NUTS FOR ROLLING AT THE END SO GO AHEAD AND CRUSH SOME MORE!!
Start off by putting peanut butter, coconut oil and agave in the food processor. Give in a mix till it comes together smoothly.
Next add in the whole almonds, cashews and coconut flakes, chia seeds, protein powder and dried fruits and let the food processor go to work. Let it run until the nuts are all chopped finely or until the are they size you may like them. Some like them chunkier than others!!
It will look something like mine when you are done. Put in all in a glass or ceramic baking dish and smooth it out. Now just pop it into your freezer for a bit and it will be so easy to roll. It's best to let it freeze for a couple hours but if you let it stay longer...no worries..just give it a few minutes to thaw when you take it out and roll the balls when its workable.
I like to roll them in three different choices. Crushed nuts, coconut flakes, and my favorite...cocoa powder. You get the chocolate flavors without the actual chocolate. Its really all you need on these but if your feeling a little crazy...go ahead...melt some chocolate and dip...dip..dip!! A little chocolate never hurt anyone!!
These are kind of my substitute for those darn oreo balls that someone turned me on to a few years back and everyone loves. This is definitely a much healthier version that you do not have to feel so guilty about...even if your eating them for breakfast!!! ENJOY!!
