Talk about memories!!!! There's a lot of memories in this recipe. In fact, I had my mom come over today and make this one with me to make sure I wouldn't forget a thing. We had the best time talking about all the dishes my Grandma Mae made over the years. This was definitely a family favorite. Everyone loved Chicken in the Wine!! So simple....yet so delicious!! She had so many dishes like this....unfortunately nothing was ever written down so it is purely all memory. That's why I have Gigi working with me!! And I think we got it right!!!
CHICKEN IN THE WINE
8 PIECES OF CHICKEN (4 THIGHS & 4 DRUMSTICKS OR CUT UP BREASTS IS YOUR PREFER)
1/2 STICK OF BUTTER 3 TBLSP OLIVE OIL 1 WHOLE HEAD OF GARLIC CHOPPED 2 TBLSP FRESH CHOPPED ROSEMARY 1/2 WHITE WINE 1 PKG MUSHROOMS SALT & PEPPER
Heat your oil and butter in a large saute pan.
Add the chicken pieces to the pan and brown. Turning over to brown on both sides. Cooking about 15 minutes on each side. Season with salt & pepper.
Look at Gigi....I got her working today!! Haha!! Gooooo GIGI!!
Chop your garlic and rosemary.....add to the pan.
Add the wine and continue to cook until reduced by half.
Lastly.....wash and slice your mushroom and get them into the pot for the last 10 minutes.
If you could only smell this....you would love it already!! The garlic, rosemary and wine....you could only imagine. You will just have to try it and smell it for yourself. Thanks to Gigi for all your help today and reminiscing about Grandma's Food!!! Always fun.......ENJOY!!!
