This was a crazy concoction I came up with that turned out to be delicious. I am still trying to use the ridiculous amount of corn that our friends brought when they came to visit us. I know you have seen a lot of corn recipes lately but I promise we are almost out!!! HAHA!! And this one is actually a winner. I will definitely be making this again. When I was walking around the grocery store today I saw these little mexican peppers and thought...ok that will work with corn. Let's give it a try...It's all good stuff!! Sooo...thanks for all that corn, Art!!!!
6 EARS OF CORN OF THE COB PRECOOKED 10 TO 12 MINI MEXICAN PEPPERS 1 MEDIUM ONION I STICK BUTTER 2 TBLSP FRESH CHOPPED CILANTRO 1 LIME JUICED 1/4 CUP HONEY 1 TSP CHIPOTLE POWDER 1 TSP PAPRIKA SALT & PEPPER
First, prepare your peppers and onions. Wash and dice your peppers as well as your onion. If you can not find these Mexican Peppers, then I would just use regular.
In a large saute pan, melt the butter first, then add all of the peppers and onions.
Season all well with salt & pepper and allow to saute over a medium/high heat until slightly softened. Add the juice of the lime, honey, chipotle powder and paprika........ continue to cook for about 5 minutes.
Lastly...add the fresh chopped cilantro and the corn. Again, allow to saute for the last 5 minutes.
This is a delicious sort of southwester flavor dish. But the honey/lime/spice combination is amazing...and of course, the star of the show.....the beautiful corn!!! It's a great dish. So glad I had all of this corn to play with today!!! ENJOY!!!! ALL GOOD STUFF!!!!!
