So, I had this thought about my niece Katie the other day when I was making a guacamole. Whenever I make guacamole, she says leave it chunky... I like it chunky, other people like it smooth. So, I thought why not just mix up the other ingredients, and leave the avocado whole and everyone can do what they want with it. Actually, it made a beautiful presentation. Sometimes, it's all about the presentation. This looks so pretty!! Makes a beautiful little side in place of a salad. So, today I made this Inside Out Guacamole with a very simple Chili Pepper Shrimp in the shape of a heart for my daughter Chelsea who is coming home to visit her Mama on Valentine's Day!! She will love love love this lunch!!
INSIDE OUT GUACAMOLE SWEET CHILI PEPPER SHRIMP
4 Avacados halved and pitted 1 lb large cleaned shrimp Handful of cherry tomatoes halved Flour for dredging 2 cloves of garlic minced Sweet chili pepper sauce 1/4 of a red onion chopped Handful of Arugula 1 TBLSP Fresh cilantro chopped 1 small mango diced 1 Lime juiced Olive oil Salt & pepper
Let's make our shrimp first. All you need to do is dredge the shrimp in the flour for dusting, shake off any excess. Then dip it in this amazing chili pepper sauce. I love this sauce. It's great on fish, chicken, use it like I am today, or just use it as a dipping sauce. It's so good, you have to try it.
Next, put the shrimp in a heated cast iron pan with just a tablespoon of oil to coat the bottom. They only take about three minutes on each side. Cook until they are that nice pink color.
Beautiful, right??? Wait till you taste them. That sauce is literally all you need, but I would have a little extra on hand because you may want to dip some more!!
Now, mix all the ingredients listed for the guacamole together in a bowl, except for the avocados. I would halve and pit them at the last minute so they do not start to turn color before you are ready to eat.
Now, top each avocado half with some of the filing and a couple of shrimp. I love my heart shapes I made on Chelsea's plate but, of course, she got a few more on the side...cause you can't only eat two. How adorable is this? There's a lot of love on that plate!! By looking at the smile on her adorable face... I think she's feeling the love!!!
