I call this Katie's Rice, because we were at our shore house with one of our favorite families when Katie and I created this recipe. I really do not remember how or why we put these ingredients together but we did....she loved loved loved it...and there you go!! Katie's Rice!!!! I hope you enjoy it just as much as Katies does!!
KATIE'S RICE
2 CUPS INSTANT RICE 1 BUNCH OF ASPARAGUS 1 SMALL ONION 6 SLICES OF PROSCUITTO 3 TBLSP OLIVE OIL 3 TBLSP BUTTER PEPPER
Prepare instant rice as directed on package.
In a large saute pan heat oil and butter. Chop onion and add it in. Chop asparagus in 1" pieces and add them in also. Season all with pepper. No salt needed with the proscuitto and cheese, it will be salty enough.
Grab your proscuitto and chop into small pieces.
Add it into the pan when your asparagus and onions are done cooking. Turn off the heat immediately after adding it in.
Add the rice right on top as well as the grated cheese.
Gently, stir together well. So easy......yet so tasty. I'm not sure about today but Katie went through a stage where she ate plain rice constantly.....I'm thinking that I wanted to add some veggies or at least flavor to it. Well we definitely did that. It is very flavorful.....give it a try...Katie loves it!! ENJOY!!! ALL GOOD STUFF!!!
