OK this is a crazy, kind of kooky but fun recipe created for my son in law, Ryan!! Ryan loves all things chorizo....sausage...mac-n-cheese...fried anything!! Such a healthy eater....haha!! So I decided to freak him out and put the chorizo in the mac-n-cheese. And if that's not crazy enough....he doesn't no but I made two dishes so tomorrow I can roll some up...bread them and fry them into Mac-N-Cheese Chorizo Balls!! Oh my gaawwddd....I just might win the Mother-In-Law of the Year Award!!
MAC-N-CHEESY CHORIZO
1 POUND PASTA OF YOUR CHOICE ***I LOVE USING A RUFFLED PASTA LIKE RADIATORI...THE RUFFLES HOLDS ON TO THE CHEESE WONDERFULLY BUT YOU CAN USE AN ELBOW, SHELL, ETC..
Preheat your oven to 400 degrees and roast your chorizo for about 40 minutes until golden brown. Let cool and slice in strips and then in cubes. Set aside. Turn your oven down to 350 degrees.
Prepare your pasta as directed on package. In another sauce pan...cube your velveeta and add in the milk and butter cut into pieces. Melt all together over a low flame so you do not burn it. Season with black pepper.
When pasta is done get half into a baking dish. Pour half of the cheese over the top and mix together well.
Top with all the chopped chorizo......
Now cover with the remaining half of Mac-N-Cheese that you have mixed together separately. Top with a handful of panko!!!
Bake at 350 degrees for 30 minutes or until panko is nice and crunchy.....YUM!!!
OK...I think Ryan is going to love this one. But I can't wait to see his reaction tomorrow when I roll it up into balls and fry them....haha!!! ENJOY!!!!
